Winter Weekend Comfort Food: French Toast Casserole

For me, there is nothing like french toast when you need a comfort food meal. And after the year we have had, I say we deserve one. At least, just this once. ;)

I used to routinely order french toast when I went to breakfast restaurants, and always loved it. And sometimes, on weekends, I’d make it myself.
 

But my darling son does not like it, so I got out of the habit, after a while. I wonder if he would like a french toast casserole. 
​

Here’s a recipe I might try, and if he doesn’t want any, then there will be more for me. ;)

This recipe would make a great occasional treat for your family on a slow weekend morning. Maybe just before a family movie marathon?

My son also doesn't care for French Toast but my husband and I do. As well as my sister so I may make this and invite her for Breakfast. My son can make himself Waffles which he prefers then like you said we can watch a movie.

We recently picked up a fancy take-away meal, and once of the extras was an apricot cinnamon roll to bake for breakfast the next day. The instructions called for the finished rolls to sit on the counter for a few minutes after coming out of the oven so the delicious smell could fill the kitchen. That's what I thought of when I read this recipe: those delicious smells that would make everyone in the kitchen happy and hungry! Thanks for the inspiration.

Ohhh! That sounds heavenly!! I hadn't even thought of that part. But you know, that is what I do all the time, when I scent my home. My candles, my room sprays, etc., all smell like something is baking in the oven. It's quite delightful!

Jeanine, this does sound great! I read the entire recipe plus the wisecracks. :-) I think we would drink black coffee with it. Also, I think the "leftover" portion would refrigerate well, at least until the next day's breakfast.

Mine's simpler- and a whole lot less rich...
Breakfast Casserole (instead of French Toast)
make the night before- and bake in the AM.
1 loaf of challah chopped or torn into small pieces.
8 oz cream cheese (cubed from package)
8 eggs
2 cups milk (half and half is a bit too rich for me)
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cardamom
1 tsp vanilla extract
3/4 cup brown sugar

Grease 13 by 9 baking dish.
Spread layer of bread on bottom, then layer of cream cheese cubes, topped with a layer of bread
Mix eggs, milk (half and half?), spices, vanilla, and brown sugar in bowl and whisk until blended.
Pour mixture over bread in baking dish slowly. Cover and refrigerate overnight.
Bake COVERED 40 min at 350 F. Remove cover and bake 10 min more.
Serve with warm maple syrup

I have to say, that looks naughty, but nice, especially since I like bread pudding. I'm sure my wife will love it, too. We'll have to indulge.
